This 2010 Domaine de Chevalier is deeply coloured, concentrated and firmly structured wine will just begin to stretch its legs by 2017, so try to resist opening your bottles until this time. Then let the wine breathe in a decanter for a couple of hours before serving. Enjoy this wine with simple red meat dishes or mature cheeses when young, and with game and sauced meats when it is more mature.

The world-renowned American wine writer Robert Parker describes Domaine de Chevalier as "a true connoisseur's wine" and adds "the production is tiny and the wines are amongst the most highly sought-after of Pessac-Léognan". He writes of this vintage's offering: "Consultant Stephane Derenoncourt along with owner Olivier Bernard have done a fabulous job over recent years ... the nose offers elegant aromas of crushed rocks, acacia flowers, boysenberries, black currants and subtle toast as well as oak."
