As always, Taylor Fladgate is one of the benchmarks of a declared vintage in Oporto. Having spent the past 10 years evolving in the bottle, the 2007 Taylor's vintage port has just started entering its drinking window.

The 2007 Taylor Fladgate Vintage Port is a blend of multiple sites meant to express the house style in a great year. It displays a superb aromatic array of pencil lead, Asian spices, incense, blackberry, and floral notes. Dense, suave, and opulent on the palate, this is a mouth-filling, intense, layered wine that has superb grip and concentration. It will effortlessly age for 25+ years and still be delivering pleasure at age 50. " Wine Advocate 2010.

The association of Vintage Port with a mature blue cheese such as Stilton is one of the great classic food and wine combinations. The soft buttery texture, mellow character and piquancy of the cheese are perfectly matched by the powerfully majestic flavours of the Vintage Port. Other blue, buttery, mellow and slightly piquant cheeses to consider would be: Cashel Blue, Roquefort, Gorgonzola and Saint Augur Blue. Vintage port is also good with chocolate - a flattering accompaniment to top quality hand-made chocolates and artisan chocolate bars or (particularly delicious) chocolate covered figs.
