The Pedro Amontillado was a wine selected by Antonio Sánchez decades ago, with a very special purpose, to share them during Holy Week with his friends and family. They were only opened on those dates, the rest of the year they wouldn’t allow anyone to touch them. Today, Antonio has decided it’s time to share them with the rest of the world.

Olorosos are Sherries that have aged in the absence of flor and are rich and full. As the name indicates it is a highly aromatic wine with toffee notes. This Oloroso is very slightly sweetened to leave a smooth satisfying finish in the mouth.

A full dry Oloroso oxidatively aged in oak Sherry butts for 5 years to develop is concentrated nutty and dried fruit flavours.

A superb Fino sherry, aged for a minimum of 3 years in Barbadillo’s cellars.

Barbadillo’s Finos are more Manzanilla-like in style, but are aged in Bodegas with less exposure to the cooling sea breezes. The flor in the barrels grows vigorously in these cellars so the wine is a little more nutty and toasty than the more appley and yeasty Manzanillas of Sanlucar.

TASTING NOTES
Straw yellow in colour. The classis fino aromas are revealed on the nose; nuts, olives and the evocative suggestion of a patient ageing process. In the mouth it is sharp and exhibits full body and perfect balance.

A touch of Pedro Ximénez added to a dry oloroso results in this type of sherry known as “amoroso.” Translated into English as loving or affectionate, the name pays tribute to the smoothness obtained during the lengthy and traditional ageing period. Its alcohol content and body mean that it can be served on the rocks.

A 15 year old sherry wine. Attractive colour of antique gold. The aromatic complexity reveals toasted almonds, walnuts and raisins. On the palate it is pleasant, rounded and harmonious. Deliciously smooth and lingering.

The Palo Cortado sherries are particularly special within the Jerez-Xèrés-Sherry Designation of Origin. This is because despite the fact that production follows the similar physical-chemical process of oxidative ageing as with the olorosos, the result is quite different with their organoleptic characteristics falling somewhere between those of an amontillado and an oloroso.

Sherry, Manzanilla Pasada Pastora

Barbadillo Manzanilla Pasada en Rama Pastora is a complex fortified wine that is full of nuances, and especially recommended to those who love manzanillas. Its golden yellow colour already gives some indication about how many years it has aged. Suspicions are confirmed in the smell, where very marked yeast aromas appear, with saline and marine hints. The palate is intense and powerful, with dry, salty and bitter, very light touches.

Serve this sherry at 8°C and pair with oily fish, smoked foods, white fish, aperitif, charcuterie, sushi, cured cheeses.

Pale Cream Sherry, Jerez, Andalucia

This style is a relatively new arrival in the history of sherry production having only been introduced in the 1970’s.

Fino Sherry blended with young, vibrant Moscatel which results in this appealing combination of sweetness and tangy freshness. Aged in cask in the traditional Solera System within the ancient cathedral style cellars of Barbadillo, this wine is a blend of different criaderas.

TASTING NOTES:
Light golden colour and with an aroma reminiscent of Manzanilla combined with the fruity nose of Moscatel. On the palate it is delicate, soft and sweet, with a full long finish.

SERVING SUGGESTIONS
Serve chilled as a sweet aperitif or as a dessert wine with fruit salads, cheese platters, or Crème Brulée.

Valdespino, Non Vintage

Pedro Ximénez `El Candado`

El Candado is Spanish for the padlock, and indeed every bottle comes with a small padlock and two little keys. The idea is that a butt from this solera used to be locked away as someone from the Valdespino family wanted to keep the wine to himself.

Nose: quite a bright nose, with lots of raisins and figs but in a fruity way rather than the sticky way. Honey and plenty of quince jelly. Some green, leafy notes too, as well as a light woody touch. Light cinnamon.

Mouth: very sweet and onctuous, but again not over the top. Toffee notes, desserts with figs and honey. Guava. Grows slightly darker towards the end, with some Turkish coffee, dark caramel and a light spicy edge (pepper, cardamom).

Palo Cortado `Viejo C.P.`

The NV Palo Cortado Viejo C.P. produced from Palomino from the Macharnudo Alto is feed with specific casks of Fino Inocente and Amontillado Tio Diego. It was traditionally aged in the Calle Ponce (Ponce Street), and if has kept the C.P. initials since then. It’s not age-certified, but the average age of the bottled wine is 25 years.

Notes: Pale sandalwood/caramel in hue, with a fresh, brisk, redolently woody aroma. Though appearing to teeter on the verge of volatility by virtue of being so dry and so woody, the blue cheese notes (cachel blue / dolcelatte / cabrales / stilton) lift it into an entirely different level.

This quina is from a traditional recipe used by the Valdespino family for over 100 years. It is old Oloroso wine from the VOS and VORS soleras blended with a little Pedro Ximenez from El Candado. The wine is aromatized by fruits, roots and herbs such as Cinchona bark, gentian root, licorice, nutmeg, dried grapefruit and dried Seville oranges,.

Notes: Dark mahogany colour with coppery tones. The nose is concentrated with layered aromas of aniseed, nutmeg and dates. Notes of quinine and a satisfying bitterness on the palate lead to a long and complex finish. This is the perfect aperitif, served in a tumbler glass on the rocks with a cinnamon stick and a twist of orange

This Oloroso sherry wine, was bottled in 1954. An intense sherry that is matured in an oxygen present environment. The resulting wines are fragrant and the best examples will display dried fruits, leather, polished wood and exotic spices. Oloroso shows nutty aromas (especially walnuts), combined with polished / balsamic notes, subtle dried fruits, toasted hints, tobacco and autumn aromas. There are noticeable spicy notes in older examples. Often also meaty hints, truffle and leather.

Food & wine Pairing:
The classic pairing for an Oloroso would be red meat and game, but it will also be lovely with well-aged cheese.

Manzanilla is Barbadillo’s speciality and this excellent example has been aged for 3 years in Barbadillo’s cellars.

Fino style Sherries age under a layer of “flor” (a naturally occurring layer of yeast that grows on top of the wine in the barrel); this ensures the wines do not oxidise as there is no exposure to the air. The cooler maritime microclimate of Sanlúcar ensures flor grows particularly thickly all year round producing these very fresh, tangy Manzanillas, unlike the more oxidised Finos aged in the inland town of Jerez, where the flor dies back in the winter and summer months.

This was slightly tired, but still charming. The nose had more than its fair share of balsamic and Madeira notes, but also a nice blush of dried cherries and berries, earth and cigarette smoke, and beyond that a lovely waft of perfumy florals. Funk aside, this was really nice. The palate was more alive than the nose let on, with fresh acidity and a rustle of silky tannins running through clear, pure notes of dried strawberries and cherries, with a whiff of cigarette spice and some wilting florals, all somewhat shadowed by a little layer of earth, meaty funk into a nice long finish.
