10 Year Old Cream
A generous wine with a unique and surprising character. Produced from the mix of our Don PX and aged Oloroso soleras, using Pedro Ximénez grapes only. It’s put to an oxidative ageing for 10 years. TASTING NOTES: Sight: Dark mahogany, slow movement in glass. Aroma: Very intense. Pedro Ximénez’s distinctive aromas such as honey, caramel and raisined plums blend together. A citric orange peel touch comes along with the Oloroso oxidative aromas like toasted, toffee, smoked and spices smells. Taste: Sweet and fresh entry. A round wine where the acidity and sweetness are perfectly balanced. A pleasant and highly aromatic pass. SERVING SUGGESTIONS: Ideal to enjoy on its own, in a glass with an ice cube and orange rind. It’s also excellent with pâté and foie, medium mature cheeses, cheesecake and berries.
15 Year Old Fino Pasado
This wine is obtained after 15 years of biological ageing through the criaderas and solera system. In the last years, the veil of flor begins to weaken. Then, the oxidative ageing begins, which makes it rich in complexity and elegance. TASTING NOTES: Sight: Old gold with copper and greenish reflections. Aroma: Intense and piercing aroma. The biological ageing smells such as almond and yeasts, merge together with hazelnut and toasted aromas from the oxidative ageing. Taste: Dry and enveloping entry, mineral and saline sensations. A complex and elegant wine. SERVING SUGGESTIONS: Perfect to taste with tapas, Iberian hams and mature cheeses. It’s also ideal for pairing with rice and meat dishes.
10 Year Old Fino Lagar
To produce the Fino del Lagar the best Pedro Ximénez grape musts have been selected and put to a biological ageing under veil of flor, through the criaderas and solera system for a period of 10 years. Alcohol is obtained in a natural way. TASTING NOTES: Sight: Straw-like yellow with golden and greenish reflections. Aroma: Intense and piercing, almond, hazelnut and bread crumbs. Moreover, fresh vegetable, hay and olive notes. The smoked and toasted character from the American oak is noticed in addition to liquorice notes, which adds a natural, subtle alcohol and a distinctive touch. Taste: Dry and mouth-filling entry, silky and pleasant texture. Persistent bitterness that eventually disappears to make room for an eternal salinity. SERVING SUGGESTIONS: Ideal as appetizer or as accompaniment to oysters, hams and Iberian pork hams.
15 Year Old Oloroso
Produced exclusively with Pedro Ximénez grapes. Elegant, with an intense old wood aroma and other noble aromas, well-balanced, aged in a 15 years long oxidative Criadera and Solera system. Awarded with the Gold Mundus Vini medal.
TASTING NOTES: Sight: Mahogany with old gold borders and slow legs. Aroma: Highlights of and intense old American oak wood, together with toffee, smoked, vanilla and caramelised nuts aromas. Ripe fruits as accompaniment. Taste: Dry, soft, non-astringent, and a well-defined saline sensation. Wood appears as an elegant bitterness that makes it complex and persistent. SERVING SUGGESTIONS: Ideal for meat in sauce, stews, vegetables such as artichoke and asparagus. Furthermore, it can be paired with cheeses, nuts or on its own.
35 Year Old Amontillado
This extremely old wine proceeds from the winery’s foundational Solera, when José María Toro Albalá began to produce wines in Lagar del Carmen, in 1922. The wine is obtained in a subtle and slow way; it’s the time that induces its transformation. After an ageing of 10 years under a veil of flor in American oak butts, the veil begins to weaken and lose its protection, allowing the start of a long oxidative ageing. TASTING NOTES: Sight: Amber and, when shaken, it tints the glass with a beautiful range of copper tones. Aroma: Very intense, spicy and noble woods in still glass, leading to a glaze touch and fine pastry notes. A saline and fresh background aroma accompanies memories of raisined fruits. Taste: Dry and sharp entry, saline and mineral. Elegant and enlengthened bitter finish with noble wood aromatic hints. High persistency of aromas and tastes.
SERVING SUGGESTIONS: This exceptional wine is especially recommended with highlighted asparagus and artichoke dishes. It can also be paired with meats such as venison, bull’s tail, tuna tartar and foie kettledrum.
25 Year Old Palo Cortado
Palo Cortado is a rare type of "sherry-style" wine that is initially aged under flor to become a fino or amontillado, but inexplicably loses its veil of flor and begins aging oxidatively as an oloroso. The result is a wine with some of the richness of oloroso and some of the crispness of amontillado. TASTING NOTES: Amber colour with copper and greenish reflections. Very intense aroma with tobacco leaves, wood and spices like pepper and clove aromas, notes of citric peel and fine pastries. Nuts like walnut or hazelnut nuances. On the palate it is dry, but mouth-filling, well-defined acidity that disappears to leave room for a saline sensation. Intense and elegant. SERVING SUGGESTIONS: Serve slightly chilled, between 12° and 14° C in a white wine glass.This versatile sherry can pair well with oxtail, roasted lamb, spiced partridge, hare civet and well-roasted game. It can also be tasted with appetizers, foie, puff pastry and assorted hams.
1993 PX With a residual sugar content of nearly 400g/litre this is is sugar in a glass! Following harvest, the grapes were allowed to dry out in the sun until they become almost raisins, then the wine is pressed out and fortified to give such a high sugar content.

Tasting Notes:
The nose is complex with layers of dried fruits, dates, figs, plums, raisins, coffee, mango and chocolate. The palate is immense and the sugar is balanced by a structured acidity that keeps the sweetness in check. The experience concludes with a never-ending finish.

This wine will keep for many decades, and once opened can be enjoyed for many months when kept in the fridge.
