Description
The Barolo DOCG 1993 Sylla Sebaste is a structured and well-evolved red wine produced in the area of Barolo, in Piedmont. Made from Nebbiolo grapes, it reflects a traditional Barolo style already influenced by more modern winemaking approaches of the early 1990s, with greater precision in aroma definition and extraction control.
Tasting notes:
The 1993 vintage now shows full tertiary development while still retaining some core fruit character. The bouquet reveals aromas of steeped cherries, ripe plum, dried rose petals, licorice, leather, and tobacco. With aeration, additional layers emerge, including sweet spices, damp earth, forest floor, and subtle balsamic notes.
On the palate, it is structured yet harmonious, with tannins softened by time and the typical Nebbiolo acidity still providing balance. The fruit has evolved into more dried and savory tones, complemented by earthy and spicy complexity. The finish is elegant, persistent, and lightly mineral-driven.
Serving & food pairing:
Best served at 16–18°C, with a short period of air exposure in the glass before drinking.
Pairs well with:
Braised beef
Roasted red meats
Game dishes (wild boar, hare)
Porcini mushroom risotto
Aged cheeses
Producer:
Sylla Sebaste is a historic winery from the Langhe region, known for producing traditional Barolo wines with a relatively modern and quality-focused approach. Their 1990s vintages reflect a transitional period in Barolo winemaking, balancing structure and aging potential with improved accessibility and aromatic clarity.
