Mount Horrocks, 2022

Mount Horrocks 'Cordon Cut' Clare Valley Riesling, South Australia

The Mount Horrocks Cordon Cut Vineyard is located at Auburn, close to the Mount Horrocks Cellar Door (formerly the Auburn Railway Station) and is planted to riesling. At an elevation of 340 metres it is a warmer site and ideal for producing this richer, more concentrated style of wine. 'Cordon Cut' refers to a complex, highly risky process requiring both skill and experience, which involves cutting the vine canes when the grapes are ripe, allowing the remaining fruit to concentrate and raisin naturally on the vine. This results in intense flavour and richness. The decision to pick is made by Stephanie, and is based on the appearance and taste of the fruit, and her intimate knowledge of the process.

Chateau d`Yquem is often described as the greatest sweet wine in the world. After centuries of family ownership, Yquem was finally sold in acrimonious circumstances to Louis Vuitton-Moët-Hennessy in 1999. However, its former owner and director Alexandre de Lur-Saluce remains in charge. Yquem is located on the highest hill in Sauternes and enjoys the best growing conditions in the whole appellation. The 110-hectare vineyard is planted with 80% Sémillon and 20% Sauvignon Blanc. Only fully botrytized fruit is picked by the 150 highly skilled pickers and yields are so low that each vine produces only one glass of wine.

Chateau d'Yquem, 2000

Sauternes 1er Cru Classe

Only 25,000 bottles of Yquem were made in this very tough Sauternes vintage. A truly valiant effort from this fine property.

"The millennial 2000 Chateau d’Yquem is a valiant effort in one of the most challenging Sauternes vintages in recent memory. The 2000 is quite deep in colour. The nose is crisp and well-defined but not the most complex, as you would expect from a truly challenging growing season in Sauternes. It is pleasant in its own way with delicate scents of tangerine, yellow flowers and Mirabelle. The palate is well-balanced with marmalade tinged opening. I like the acidity here, an Yquem with good race, although it does feel a little tapered toward the finish.

Tokaji, 1993

Tokaji Royal Aszu Essencia
(Half litre, 50cl), Hungary

Situated along the southern slopes of the Zemplén Mountains, Tokaj is characterized by late springs and short growing seasons. The average temperatures are generally cool, with long, sunny summers and dry autumns. Tokaj’s soil is largely clay or loess with a volcanic substratum; vines are approximately 20 years old. The meeting of the Tisza and Bodrog rivers in Tokaj creates a mist similar to that of the fog in Sauternes. The mist encourages “botrytis cinerea,” or “noble rot,” which dries and shrivels the Furmint, Hárslevelü and Muscat grape varieties that comprise Tokaji wines, and concentrates the sugars.
