1990 Chianti – Grasi, “Vigna Gaversa” (Tuscany, Italy)
A beautifully mature, single-vineyard Chianti that trades power for perfume and poise. Brick-garnet with a tawny rim, it opens on lifted aromas of dried cherry and amarena, rose petal, cedar and sweet tobacco, with hints of orange peel, tea leaf and a gentle balsamic note. The palate is mid-weight, savoury and silken: lively, old-school acidity carries red-cherry fruit, dried herbs and subtle leather; tannins are fine and fully resolved. The finish is long and tapering with cherry skin, cedar spice and dried flowers.
This is dinner-table Chianti in a classical key—elegant, nuanced and ready to pour. “Vigna Gaversa” shows the graceful side of mature Sangiovese, making it ideal for unhurried meals and conversation.
Serve: 16–18 °C. Stand upright 12–24 hours; very gentle decant for sediment just before pouring.
Food pairing: Roast chicken with herbs, bistecca tagliata, porcini risotto, pecorino stagionato.
