Description
The *China* from Pilla is a traditional Italian herbal elixir, centred around the distinctive bitterness and aromatic complexity of *china* (quinine bark). Produced by the historic Venetian distiller Pilla, renowned for its fine liqueurs and aperitivi, this expression reflects the classic 19th- and early 20th-century Italian style—where herbal infusions were crafted as both pleasurable drinks and restorative tonics. It is a bittersweet, spiced, and gently medicinal liqueur designed to be enjoyed slowly, either as an aperitivo or digestivo.
In the glass, Pilla *China* shows a deep, rich amber-brown colour with warm mahogany tones. The nose is layered and evocative, with pronounced aromas of quinine, dried orange peel, and alpine herbs, supported by notes of cinnamon, clove, and a faint balsamic resin quality.
On the palate, it is smooth, rounded, and immediately bittersweet. Initial flavours of candied citrus and warm spice give way to a clean, herbal bitterness from the quinine, balanced by hints of caramel, liquorice root, and dried fig. The finish is long, pleasantly bitter, and aromatic, leaving a lingering herbal freshness.
