Description

The 1981 Amarone DOC by Fabiano is a traditional Valpolicella red wine made in the classic Amarone style, using partially dried grapes (appassimento) to achieve concentration, depth, and structure.

Tasting Notes: Now fully mature, it likely shows evolved aromas of dried cherry, raisin, fig, and plum, layered with tertiary notes of cocoa, leather, tobacco, and sweet spices. On the palate it is expected to be smooth and velvety, with softened tannins, integrated acidity, and a warm, lingering finish with oxidative complexity typical of aged Amarone.

Serving & Food Pairing: Best served at 16–18°C, ideally after careful decanting to remove sediment. It pairs well with braised meats, game, aged cheeses, and rich slow-cooked dishes, though it can also be enjoyed on its own due to its maturity and depth.
