Description
The *Barolo Chinato* from Cocchi Giulio is a classic and authentic rendition of one of Piedmont’s most distinctive wines, uniting the depth and structure of fine Barolo with the complexity of an infusion of herbs, roots, and spices. Produced by Giulio Cocchi, a historic name in the art of aromatised wines and vermouths since the late 19th century, this expression follows a traditional recipe that begins with mature Nebbiolo-based Barolo, rich in aromas of rose, cherry, and subtle spice. It is then steeped with quinine bark (*china*), rhubarb root, gentian, cinnamon, cloves, and other secret botanicals to create a bittersweet, velvety elixir with both gastronomic and medicinal heritage.
In the glass, Cocchi Giulio’s *Barolo Chinato* shows a deep garnet-brown hue with amber and mahogany glints, reflecting both age and botanical infusion. The bouquet is intense and layered, with dried cherry, plum, and rose petal at the core, surrounded by warm spices such as cinnamon, nutmeg, and clove. Bitter-herbal notes of quinine and gentian root mingle with cocoa, liquorice, and candied orange peel, while a subtle balsamic lift adds freshness.
On the palate, it is rich, smooth, and perfectly balanced between sweetness, warm spice, and refined bitterness. Flavours of spiced red fruit, dark chocolate, and caramelised citrus unfold gradually, supported by a fine tannic backbone from the Nebbiolo. A lively acidity ensures vibrancy, while the finish is long, warming, and layered, leaving lingering impressions of botanicals, citrus zest, and cocoa.
Best served slightly chilled or at cellar temperature in a tulip glass, Cocchi Giulio’s *Barolo Chinato* is ideal as a digestif, pairing beautifully with high-cocoa dark chocolate, hazelnut-based desserts, or aged blue cheeses. More than just an after-dinner drink, it is a piece of Piedmontese tradition—an elegant marriage of Barolo’s nobility and the time-honoured artistry of herbal infusion.
