    The *Barolo Chinato* from Fontanafredda is a refined and authentic interpretation of one of Piedmont’s most historic aromatised wines, combining the structure and elegance of fine Barolo with the complexity of a time-honoured infusion of herbs, roots, and spices. Crafted from Nebbiolo grown in the Langhe, the wine begins as a fully matured Barolo, already rich in aromas of rose, cherry, and gentle spice, before being steeped with quinine bark (*china*), rhubarb root, cinnamon, cloves, and other secret botanicals. The result is a bittersweet, velvety elixir that has been enjoyed in the region for more than a century as both a restorative and a sophisticated digestif.

    In the glass, Fontanafredda’s *Barolo Chinato* shows a deep garnet-brown hue with warm amber highlights, reflecting its maturity and botanical infusion. The nose is immediately captivating—dried cherry, spiced plum, and rose petal mingle with cocoa, candied orange peel, and layers of cinnamon, nutmeg, and clove. Subtle hints of gentian root, liquorice, and balsamic complexity emerge, giving the bouquet depth and intrigue.

    On the palate, it is smooth, warming, and perfectly balanced between sweetness, spice, and a refined medicinal bitterness.
