Cabernet 1981 – Simon (Italy)

The 1981 Cabernet from Simon is a rare and fascinating example of mature Italian Cabernet, showing how beautifully the variety can evolve outside its traditional French strongholds. The colour has softened to a deep garnet with amber highlights at the rim, reflecting its long and careful ageing.

The bouquet is complex, elegant and gently savoury. Aromas of dried blackcurrant, cassis and stewed plum are layered with notes of cedar, old leather, tobacco leaf and dried herbs. Hints of balsamic, forest floor and gentle spice add further depth, giving the nose a distinctly Italian character.

On the palate, the wine is refined and harmonious, with tannins fully resolved into a silky, supple texture. Flavours of dark berry compote, dried cherry and plum skin are supported by savoury notes of earth, tea leaf and subtle oak spice. The acidity remains well balanced, providing clarifying freshness and lift.

The finish is long, calm and gently persistent, leaving lingering impressions of dried fruit, cedar and soft herbal tones. This is a wine that rewards slow, thoughtful drinking.

This mature Cabernet pairs beautifully with roasted or slow-cooked meats such as beef, lamb or game, as well as rich pasta dishes with tomato, mushroom or truffle-based sauces. It also works very well with aged cheeses, particularly hard Italian styles, and with simple charcuterie where its elegance can shine without being overwhelmed.
