Description

1975 Chianti – Cantine Baiocchi (Tuscany, Italy)

A fully mature, classical Chianti that trades power for perfume and savoury finesse. Brick-garnet with a broad tawny rim, it opens on dried cherry and amarena, rose petal, cedar and sweet tobacco, with hints of orange peel, tea leaf and a gentle balsamic note. Mid-weight and silken on the palate: lively, old-school acidity carries red-cherry fruit, dried herbs and subtle leather; tannins are fine and resolved, the finish tapering with cherry skin, cedar spice and dried flowers.

Producer note: Bottled by Cantine Baiocchi in the traditional Tuscan style—Sangiovese-led, aged in older wood—this shows the elegant, food-table character that ages into fragrance and poise.

Serve: 16–18 °C. Stand upright 12–24 hours; very gentle decant for sediment just before pouring.
Food pairing: Roast chicken with herbs, bistecca tagliata, porcini risotto, pecorino stagionato.
