Description
The Graham's 1975 Vintage Port is a mature, nuanced wine from a vintage that, while not as celebrated as others, has developed a dedicated following among Port enthusiasts. Bottled in 1977, this Port has aged gracefully, offering a complex profile that reflects both its heritage and the passage of time.
In the glass, it presents a pale, golden-rose hue, indicative of its age. The nose is perfumed and elegant, with tones of freshly baked brioche. On the palate, it offers sweet maraschino cherry flavors accompanied by mature, nutmeg notes. The finish is reminiscent of Christmas cake, a hallmark of Graham's style, and lingers pleasantly .
When serving this vintage Port, it's advisable to decant it carefully to separate it from any sediment that may have formed over time. Allowing the wine to breathe for about an hour will help in releasing its intricate aromas and flavors. Serve it slightly below room temperature, around 16–18°C, in a tulip-shaped glass to concentrate its bouquet and enhance the tasting experience.
In terms of food pairings, the Graham's 1975 Vintage Port complements a range of dishes. Its rich profile pairs beautifully with blue cheeses like Stilton or Roquefort, as well as with desserts featuring dark chocolate or dried fruits. For a more traditional approach, enjoy it alongside a slice of Christmas pudding or a nutty tart. Alternatively, savor it on its own as a contemplative after-dinner drink, allowing its depth and complexity to shine.

Serving Suggestions:
When mature this port will need to be decanted to remove sediment. Serve at room temperature on its own or with vintage mature blue cheeses such as stilton Cashel Blue, Roquefort, Gorgonzola and Saint Augur Blue. Vintage port is also good with chocolate - a flattering accompaniment to top quality hand-made chocolates and artisan chocolate bars.
