Description
The *Passito del Santo* from Pieve di Sinalunga, crafted by Fassati, is a sublime expression of Tuscany’s centuries-old *Vin Santo* tradition. Made from carefully hand-selected grapes—typically Trebbiano and Malvasia—they are left to dry slowly on mats or hung in airy lofts for several months, concentrating their sugars and intensifying their aromas. Once pressed, the juice is aged patiently in small oak barrels (*caratelli*), developing the wine’s signature amber hue, rich texture, and layered complexity.
In the glass, it glows with a deep golden-amber colour, a visual cue to its opulence and maturity. The bouquet is captivating, offering aromas of dried apricot, fig, and sultana, mingled with acacia honey, toasted almond, and a hint of orange peel. Subtle oxidative notes of walnut and caramel add further depth, reflecting the long barrel ageing.
On the palate, this *Passito del Santo* is velvety, luxurious, and beautifully balanced.
