A beautifully preserved example of Vin Doux Naturel from one of Roussillon’s most respected and historic producers. Domaine Cazes, founded in 1895 in Rivesaltes, is renowned for its mastery of long-aged fortified wines — and this 1980 vintage is a superb showcase of that heritage.
Made primarily from Grenache Blanc, Grenache Gris, and Macabeu, the wine was fortified to arrest fermentation, preserving the natural grape sugars, and then aged for decades in old oak casks under gently oxidative conditions.
It pours a deep amber-gold with flashes of copper. The nose is generous and complex, offering aromas of dried apricot, fig, and quince, intertwined with honey, caramel, toasted almond, and orange peel. Subtle oxidative “rancio” notes add depth — hints of walnut, antique wood, and spice.
The palate is velvety and rich, with flavours of candied fruit, butterscotch, toffee, and nutmeg balanced by a fine line of acidity. The sweetness is smooth and integrated, leading to a long, warming finish with lingering tones of honeyed nuts and citrus zest. Mature yet remarkably fresh, it captures the timeless elegance of great Roussillon fortifieds.
Serving Suggestions
Serve lightly chilled (12–14 °C) to highlight its freshness and perfume. Decant gently if there’s any fine sediment.
Perfect alongside tarte tatin, crème brûlée, or caramelised nut desserts. Excellent too with aged blue cheeses (Roquefort, Stilton) or firm, nutty cheeses like Comté and Manchego. For a classic southern pairing, serve with toasted almonds or foie gras.
Once opened, the wine will remain in fine condition for several weeks if re-corked and stored in a cool, dark place.
