1980 Chianti – Ricasoli Brolio (Tuscany, Italy)
A fully mature, classical Chianti from one of Tuscany’s oldest estates, showing perfume and savoury finesse. Brick-garnet with a broad tawny rim, it opens on dried cherry and amarena, rose petal, cedar and sweet tobacco, with hints of orange peel, bay and black tea. Mid-weight and silken on the palate: lively, old-school acidity carries savoury red-cherry fruit, dried herbs and subtle leather; tannins are fine and resolved. The finish is long and tapering with cherry skin, cedar spice and dried flowers.
Producer note: Castello di Brolio (Barone Ricasoli) is a historic Chianti Classico reference, famed for Sangiovese from marl/limestone slopes and traditional ageing that emphasises lift, poise and graceful longevity—well expressed here at full tertiary maturity.
Serve: 16–18 °C. Stand upright 12–24 hours; very gentle decant for sediment just before pouring.
Food pairing: Roast chicken with herbs, bistecca tagliata, porcini risotto, pecorino stagionato.
