Pedro Ximénez (often abbreviated as PX) is a sweet, fortified wine primarily produced in Spain, especially in the regions of Jerez (Sherry) and Montilla-Moriles. It is made from the Pedro Ximénez grape, which is sun-dried to concentrate its sugars before fermentation. The result is a wine that is intensely sweet, rich, and dark, with a syrupy texture.

Vintage Port, DOC Douro

This famous sherry producer came to Oporto in 1895 and started to ship port in 1896. From 1901 they purchased their wines from Quinta do Roriz. The port operation was purchased by Sandeman in 1989 and it no longer exists as a trading name.

The 1932 is light tawny in colour with molasses and caramel on the nose. The port is light bodied and the sugar and caramel are evident in the taste. There is some extra complexity in the mouth and the port has a good long finish. Rating 18/20 VWP tasting.

This style is a relatively new arrival in the history of sherry production having only been introduced in the 1970’s.

When the Moscatel must has reached a certain degree of extended maturation, it is fortified with wine-based distilled spirit to bring the alcohol content up to 19%. Once clean and stable it passes to the criaderas where it is left to mature through the process of oxidative ageing. This is achieved through the oxidation of the wine whilst in barrel and racking within each tier of the criadera. This traditional system is characterised by the carefully orchestrated movement of wine between the soleras and criaderas within each cellar.
