    This 1989 Chianti has reached a refined, mature stage, showing the depth and elegance of aged Sangiovese. The bouquet features aromas of dried cherry, plum, leather, tobacco, and hints of forest floor, spice, and balsamic. On the palate it is medium-bodied, with softened tannins, balanced acidity, and flavours of stewed red fruit, earth, and a gentle touch of cedar. The finish is long, harmonious, and savoury, reflecting the wine’s classic Tuscan character.

    Serving Suggestions
    For optimal enjoyment, stand the bottle upright for 24–48 hours before serving to allow any sediment to settle. Carefully decant the wine to separate it from the sediment. Serve at 17 °C (63 °F) after decanting for 30–40 minutes to allow the aromas to fully open. Pairs beautifully with roasted or braised meats, game, mushroom risotto, aged cheeses such as Pecorino or Parmigiano Reggiano, and traditional Tuscan dishes like pappardelle al cinghiale or ribollita.

    For wines of this age, the cork may crumble when opening—this is normal and does not affect the quality of the wine. As with many mature wines, individual bottles may show some variation, reflecting their unique ageing journey. The evolved, savoury character of older wines may not appeal to every palate, but for those who appreciate the grace of time, it offers real depth and authenticity.
