"The bubbles have reached the rather calmer, mature state, but still present. Yeasty, bready nose. Slightly reductive. Palate was lighter and drier than the more serious Charles Heidsick that we drank alongside. Burst of apple fruit on the front of the palate. Slightly thin at first, but gave a greater impression of breadth of flavours and openness on the palate with some time on the glass. Finished nicely, with a touch of flint and mineral."
