This Quinta Do Noval Tawny Port is a style of fortified wine characterised by its amber colour and complex flavour profile that develops from extended aging in wooden barrels. Such wines are typically less fruity and more nuanced compared to Ruby Port and reveal amber colour with aromas of dried fruits, toasted nuts, caramel, and occasionally a hint of spice or vanilla. On the palate it should be smooth and balanced, with notes of nuts, dried fruits (such as figs and raisins), caramel, and hints of citrus peel.

Rutherglen Muscat

Sweet White Wine

Rutherglen Muscat is one of Australia's unique and richest styles of wine. In order to make it, Muscat grapes are left to raisin on the vine and then partially fermented before being fortified with grape spirit and aged in cask in a very hot climate for a long time.

This sweet wine should display a deep amber colour with aromas of burnt sugar and dry plum. Lush and smooth with cinnamon toast and spices on its lingering finish.

Valdespino, Non Vintage

Pedro Ximénez `El Candado`

El Candado is Spanish for the padlock, and indeed every bottle comes with a small padlock and two little keys. The idea is that a butt from this solera used to be locked away as someone from the Valdespino family wanted to keep the wine to himself.

Nose: quite a bright nose, with lots of raisins and figs but in a fruity way rather than the sticky way. Honey and plenty of quince jelly. Some green, leafy notes too, as well as a light woody touch. Light cinnamon.

Mouth: very sweet and onctuous, but again not over the top. Toffee notes, desserts with figs and honey. Guava. Grows slightly darker towards the end, with some Turkish coffee, dark caramel and a light spicy edge (pepper, cardamom).
