Valdespino Quina
This quina is from a traditional recipe used by the Valdespino family for over 100 years. It is old Oloroso wine from the VOS and VORS soleras blended with a little Pedro Ximenez from El Candado. The wine is aromatized by fruits, roots and herbs such as Cinchona bark, gentian root, licorice, nutmeg, dried grapefruit and dried Seville oranges,.
Notes: Dark mahogany colour with coppery tones. The nose is concentrated with layered aromas of aniseed, nutmeg and dates. Notes of quinine and a satisfying bitterness on the palate lead to a long and complex finish. The grapes once harvested are placed in a “fruttaio” (a well ventilated room) to dry out, they are pressed and the wine is “rested” in wooden barrels for a year.
