Tawny Port

This classic Tawny Port from Burmester has a vivid golden-brown colour. The aromas of ripe fruit are abundant on the nose, with appealing notes of vanilla. On the palate it is delightfully fresh with a marked fruity character. Velvety, round and remarkably engaging.

Winemaking:
Hand-picked at the optimum time, the grapes are then destemmed, crushed and converted into wine through a process of careful maceration to extract their colour, tannins and aromas, enhanced by constant churning during fermentation. This takes place in stainless steel vats at a controlled temperature (between 28-30°C) until the right degree of sweetness (baumé) is achieved.

What happened 150 years ago? It was the time of Romanticism and the invention of dynamite; of the visionary novels of Jules Verne and of the first telegraphic connection between Portugal and England; but also of the appearance of phylloxera in Europe. While all this was happening, a port wine was ageing calmly in the cellars of the Douro.

Palmer Cask 150 is the survivor of a time of change, invention and plagues. His real story is printed in gold on the glass of the bottle, in direct contact with the wine. While its label tells the story known by all, the one of its time, it also conceals part of that memory.

Porto Lágrima is a richer style of Port, the sweetest wine in the category of White Port. Its name Lágrima/ Tear came about thanks to the tears that flow into the glass when we shake it, due to its high sugar content. It is a more intense, honeyed and aromatic Port.

With a predominant golden colour and liqueur texture, it has absolutely irresistible honey and floral aromas. It should be served cooler than other Ports, between 8 and 10ºC and is perfect to accompany desserts or to drink alone.

The lower residual sugar content gives this Dry White Port an elegant fresh and floral entry on the palate.

Sandeman’s Cask 33 is a single cask of Tawny Porto that is being launched to coincide with the celebration of Sandeman’s 225 years in 2015. The port includes wines of up to 70 years old that have been created by different generations of Sandeman master benders.

This release is a limited edition of only 685 bottles. The bottle design reproduces the style of those bottles originally used at the time of the founder in 1790 and are hand blown by one of Portugal’s last great artisanal bottle works.


Each year the winemaking team taste all the wines on the aging inventory, and when necessary, make adjustments in keeping with the house style.

Palo Cortado `Viejo C.P.`

The NV Palo Cortado Viejo C.P. produced from Palomino from the Macharnudo Alto is feed with specific casks of Fino Inocente and Amontillado Tio Diego. It was traditionally aged in the Calle Ponce (Ponce Street), and if has kept the C.P. initials since then. It’s not age-certified, but the average age of the bottled wine is 25 years.

Notes: Pale sandalwood/caramel in hue, with a fresh, brisk, redolently woody aroma. Though appearing to teeter on the verge of volatility by virtue of being so dry and so woody, the blue cheese notes (cachel blue / dolcelatte / cabrales / stilton) lift it into an entirely different level.

This quina is from a traditional recipe used by the Valdespino family for over 100 years. It is old Oloroso wine from the VOS and VORS soleras blended with a little Pedro Ximenez from El Candado. The wine is aromatized by fruits, roots and herbs such as Cinchona bark, gentian root, licorice, nutmeg, dried grapefruit and dried Seville oranges,.

Notes: Dark mahogany colour with coppery tones. The nose is concentrated with layered aromas of aniseed, nutmeg and dates. Notes of quinine and a satisfying bitterness on the palate lead to a long and complex finish. Sherry, Manzanilla Pasada Pastora

Barbadillo Manzanilla Pasada en Rama Pastora is a complex fortified wine that is full of nuances, and especially recommended to those who love manzanillas. Its golden yellow colour already gives some indication about how many years it has aged. Suspicions are confirmed in the smell, where very marked yeast aromas appear, with saline and marine hints. The palate is intense and powerful, with dry, salty and bitter, very light touches.

Serve this sherry at 8°C and pair with oily fish, smoked foods, white fish, aperitif, charcuterie, sushi, cured cheeses.

Barbadillo

Barbadillo

Founded by Benigno Barbadillo in 1821 Barbadillo are the most important producers of Manzanilla. With 16 ageing cellars full of soleras they make excellent examples of the full range of Sherry styles. This delicious Palo Cortado comes from the younger part (Criadera) of the solera in the small 18th century La Sacristia Cellar and bottled unfiltered (En Rama).

Palo Cortado is one of the rarest Sherries starting life as a Fino or here as a Manzanilla aged unoxidized under the Flor, a blanket of yeast that floats on the surface blocking the air getting to the wine. In Palo Cortado the flor dies, and the wine is exposed to oxidation becoming a dark golden colour, rich and nutty, with the freshness of a Fino but the richness of an Oloroso.

An old release of Bisquite Cognac with an average age of 20 years. Bisquit is produced in Jarnac, in the Petite Champagne region of Cognac. We estimate that this was bottled during the 1960s.
Legend has it that Napoleon took crates of Courvoisier Cognac into exile with him to the island of St Helena, and the crew coined the Cognac as "Napoleon's Cognac".

Tasting Notes
Elegant copper highlights, a lingering bouquet, and a powerful, round flavour make this a very distinguished cognac. The oaky characteristics and candied fruit flavours coat the palate after the first sip.

A wonderful cognac to enjoy as a digestif at the end of a meal.

Grande Champagne Reserve Cognac (50cl)

A good Cognac is subjected to a complex manufacturing process. It is never made from the eau-de-vie of a single cru, but from a `marriage' of eaux-de-vie that vary in age and cru - some as old as a hundred. To establish the age of a Cognac, only the number of years spent in oak casks or barrels are taken into account. As soon as an eau-de-vie is decanted into a glass recipient, it ceases to age. The longer it is left to age, the more a Cognac gains in complexity, fragrance, aromas and taste (spiced, pepper and cinnamon flavours).

We estimate that this bottle of Prunier Old Pale Fine Champagne Cognac from France was bottled in the early 1970s.

The cognac comes from a large collection built up during the 1970s in Kent, England. For 50 years the owner displayed the collection in the family’s home bar, with later additions being gifted to the collector by friends and family.

Aromas of liquorice, coffee, dried fruits, orange peel and almonds fill the nose, complemented by notes of oak, leather, dried fruits and rancio throughout the palate.

Valdespino, Non Vintage

Pedro Ximénez `El Candado`

El Candado is Spanish for the padlock, and indeed every bottle comes with a small padlock and two little keys. The idea is that a butt from this solera used to be locked away as someone from the Valdespino family wanted to keep the wine to himself.

Nose: quite a bright nose, with lots of raisins and figs but in a fruity way rather than the sticky way. Honey and plenty of quince jelly. Some green, leafy notes too, as well as a light woody touch. Light cinnamon.

Mouth: very sweet and onctuous, but again not over the top. Toffee notes, desserts with figs and honey. Guava. Grows slightly darker towards the end, with some Turkish coffee, dark caramel and a light spicy edge (pepper, cardamom).
