"As I have noted consistently, this can be a breathtaking wine, but having tasted it close to a dozen times since the last edition of this book, over half the bottles were marred by tainted corks. In fact, one would almost wonder if there was TCA problem in part of the wine storage area. The percentage of corked half-bottles is even higher than in the regular format. The 1983 Chateau Pavie is fully mature, has a deep intensity, ruby colour with garnet rim. A powerful nose has developed aromas of red capsicums, earth, and black fruit. Full bodied on the palate. this still has some fruit after nearly 40 years with flavours of black plums, blackcurrant, blackberries with tertiary characteristics of leather and earth. A long spicy finish.

Crusted Port is a very small category, named because of the 'crust' of sediment that it forms in the bottle.
Invented by the British-owned Port houses predominantly for the British Port drinker, it is intended to be a more economical alternative to Vintage or Late Bottled Vintage.
Crusted is a blend of several harvests, which are bottled without being filtered and laid down to mature like Vintage wines. Using this approach allows the manufacturer to use some of the lesser harvests but still produce a good rich full bodied wine at an economical price.

A native black grape variety of Northern Italy grown almost exclusively in the provinces of Cuneo and Alessandria in Piedmont. It ripens before Barbera and Nebbiolo and is often grown in high north-facing sites which would be unsuitable for Nebbiolo. The finest Dolcetto wines come from grapes grown on soils rich with white marls, especially those found on the right bank of the River Tauro. The Nebbiolo has a lovely earthy bouquet. The nose has cherries, dark cherries, tar and slight dried rose notes. Complex and layered. Nice acidity. Medium tannins still present. Cherries on the palate too. Nice finish. Great food wine. Nebbiolo is a fickle grape famed as much for its pale appearance as for its tannic character and produces some of the most perfumed and richly flavored wines. Though generally only medium-bodied, the wines possess rose and anise scented aromatics and deep flavors of cherry, orange peel and subtle green herb tones.
