Bolivar, 1824
Amontillado Viejisimo, Domecq
The House of Domecq has spent almost three centuries pleasing sherry-drinkers of every stripe, including the royalty of Spain and England. They have also grown, eventually becoming part of the enormous corporate tapestry that is Allied Domecq, which owns a diverse range of wine and spirit producers.
This Amontillado captures vestigial freshness from the flor yeast, which has been allowed to die, in return adding colour, texture and complex malty hazelnut flavours to an unnervingly complex ensemble.

Bolgheri, 2001
Superiore, Tenuta Guado al Tasso Antinori
** 96 Points -Parker's Wine Advocate **
Tenuta Belvedere is the Antinori property in Bolgheri, once part of an enormous estate from which the vineyards of both Ornellaia and Sassicaia were carved out. After an excellent 1998, the wines of both 1999 and, particularly, 2000 were significantly less successful, but the 2001 Guado al Tasso should help forget this temporary unevenness. A dense ruby with purple highlights, the wine is loaded with aromas and flavors of perfectly ripe blackcurrant and blackberry fruit, minerals, sage, and thyme. The wine is more fragrant and more finely-spun than Antinori’s other Bordeaux wine, Solaia, but there is no lack of concentration and density here, though both are tempered by a satiny texture and polished tannins which are all elegance and breed. …

Bodegas Toro Albalá, Non Vintage
PX CENTENARIO SINGLE CASK
98 Points- Robert Parker
The Toro Albala Centenario wines are a special release to celebrate 100 years of Toro Albala. They have been chosen to convey the character and spirit of the winery. They are the result of Antonio Sánchez and each of the workers’ efforts and care for years.
The Pedro Ximénez was a wine selected by Antonio Sánchez decades ago, with a very special purpose, to share them during Holy Week with his friends and family. They were only opened on those dates, the rest of the year they wouldn’t allow anyone to touch them. Today, Antonio has decided it’s time to share them with the rest of the world.
Tasting Note
Jet black colour, very high layer, and great density, with very vivid amber reflections on the sides which stain the glass. …

POLEY PALO CORTADO "En Rama", 25 Year Old
50cl Bottle
***93 Points - Robert Parker 's Wine Advocate***
Palo Cortado is a rare type of "sherry-style" wine that is initially aged under flor to become a fino or amontillado, but inexplicably loses its veil of flor and begins aging oxidatively as an oloroso. The result is a wine with some of the richness of oloroso and some of the crispness of amontillado.
Tasting Notes Amber colour with copper and greenish reflections. Very intense aroma with tobacco leaves, wood and spices like pepper and clove aromas, notes of citric peel and fine pastries. Nuts like walnut or hazelnut nuances. On the palate it is dry, but mouth-filling, well-defined acidity that disappears to leave room for a saline sensation. …

TASTING NOTES
Mahogany colour with golden rim. On the nose, intense old American oak wood, toffee, smoke, vanilla and caramelised nut aromas intermingle with ripe and dried peach and apricot fruit. On the palate it is dry and soft, with a well-defined saline sensation. Wood notes appear in a hint of bitterness that makes this wine effortly balanced, nuanced, complex and persistent. …
