The excellent 1994 harvest in Portugal is deep garnet in colour, indicating maturity. On the nose, intense aromas of ripe blackcurrant, blackberry, and plum are layered with notes of cedar, vanilla, and baking spices. Subtle hints of tobacco and leather add complexity. On the palate it is full bodied and velvety with black cherry, cassis and chocolate with hints of graphite and espresso. Well-balanced acidity provides freshness and structure, leading to a long, lingering finish.

Serving and Food pairing
This wine is best decanted and served at room temperature of 18 degrees Celsius.

The 1995 Quinta Poço do Lobo from caves St Joao are an exceptional experience at a nice price. Plus, the provenance is perfect—re-released direct from the winery.

The 1995 Cabernet Sauvignon Reserva Quinta do Poço do Lobo is unoaked and comes in at 13.5% alcohol. This Reserva has more power than the regular reds and much riper fruit. It is bigger and fresher in every respect. Intense and powerful, this is nuanced by cassis and red fruits. It ends with a big finish. There are some typical nuances of aging Cab too. So, while it is fresh for its age, it hardly tastes like a young red. Many will consider that a good thing.

This delicious Palo Cortado comes from the younger part (Criadera) of the solera in the small 18th century La Sacristia Cellar and bottled unfiltered (En Rama).

Palo Cortado is one of the rarest Sherries starting life as a Fino or here as a Manzanilla aged unoxidized under the Flor, a blanket of yeast that floats on the surface blocking the air getting to the wine. In Palo Cortado the flor dies, and the wine is exposed to oxidation becoming a dark golden colour, rich and nutty, with the freshness of a Fino but the richness of an Oloroso.

When the Moscatel must has reached a certain degree of extended maturation, it is fortified with wine-based distilled spirit to bring the alcohol content up to 19%. Once clean and stable it passes to the criaderas where it is left to mature through the process of oxidative ageing. This is achieved through the oxidation of the wine whilst in barrel and racking within each tier of the criadera. This traditional system is characterised by the carefully orchestrated movement of wine between the soleras and criaderas within each cellar. With this particular wine, the ageing process lasts for a period of 5 years.

The Palo Cortado sherries are particularly special within the Jerez-Xèrés-Sherry Designation of Origin. This is because despite the fact that production follows the similar physical-chemical process of oxidative ageing as with the olorosos, the result is quite different with their organoleptic characteristics falling somewhere between those of an amontillado and an oloroso.

Fino Sherry blended with young, vibrant Moscatel which results in this appealing combination of sweetness and tangy freshness. Aged in cask in the traditional Solera System within the ancient cathedral style cellars of Barbadillo, this wine is a blend of different criaderas.

TASTING NOTES:
Light golden colour and with an aroma reminiscent of Manzanilla combined with the fruity nose of Moscatel. On the palate it is delicate, soft and sweet, with a full long finish.
